Bharela Ringan Bateta nu Shaak (Stuffed Eggplants and Potato)

Gujarati food is another unique cooking style in India. Each dish can offer something new to your taste buds. Today’s recipe also hasĀ  sweet, savory and spicy taste. Bharela ringana and bateta nu shaak is made with eggplants and potatoes stuffed with chick pea stuffing. I used eggplant,potato and green chilly for this recipe. you can add onion or capsicum if you like.

It is served with Roti or Paratha (Indian flat bread). Traditionally it cooked in Oil but I used less oil in this recipe.

Bharela Ringan Bateta nu shaak ( step by step with photos)

Ingredients:

250 grams Small eggplants (raviya)

3 medium size potatoes

5-6 Big green chilly (Bhavnagari maracha)

3 tablespoon Oil

1 tablespoon Red chilly powder

1 tablespoon Coriander powder

1/2 teaspoon Turmeric powder

Pinch of Asafoetida

1/2 cup Water

salt to taste

For stuffing

1 cup Chick-pea flour (besan)

2 tablespoon coarsely ground Peanut

1 tablespoon Sesame seeds

2 tablespoon Coconut powder

1 tablespoon Ginger,garlic and green chilly paste

1 teaspoon Red chilly powder

1teaspoon Coriander powder

1 teaspoon garam masala

1 tablespoon Sugar

1 tablespoon Lemon juice

2 tablespoon Finely chopped fresh coriander

1 tablespoon Oil

Salt to taste

1) Take chick pea flour in one bowl and add all other ingredients for stuffing and mix well.

2) Make a slit 3/4 in eggplants and potato both the sides. Make one slit in Green chilly and remove its seeds. Then stuff all vegetables.

3) Heat the Oil in Presser cooker and add asofoetida and add all vegetables and water.

4) Add again 1 teaspoon all seasoning and presser cook it on medium flame.

5) Bharela ringan bateta nu shaak is ready. Serve hot with Paratha or roti.

Tips

1) Do not stir it otherwise vegetables mix in one another.

2) You can cook this recipe in microwave for 10 minutes.
