Gujarati Dal Dhokali
Dal Dhokali is very popular traditional Gujarati dish made with dal (lentil) and wheat flour pieces. It has same sweet and spicy taste as Gujarati dal only difference is wheat flour dhokali are simmered in semi thick dal. It is very easy to make and very healthy. Apart from that it is stomach filling so you can serve it as a whole meal.
Gujarati Dal Dhokali (step by step with photos)

Serves: 4 servings
Ingredients:
For Dal
1 cup Toor Dal (split pigeon peas)
1 tablespoon Peanuts
1 finely chopped Green chilly
1 inch Finely chopped Ginger
2 tablespoon Jaggery
2 tablespoon lemon juice
pinch of Turmeric powder
1 tablespoon red chilly powder
1 tablespoon Coriander powder
1 teaspoon Garam masala
salt to taste
4 cup Water
For Tampering
1 tablespoon Oil
1/2 teaspoon Mustard seeds
5-6 fenugreek seeds
1 spring Curry leaves
pinch of asofotida
For Dhokali
1/2 teaspoon cumin seeds
1/2 cup Wheat flour
1 tablespoon Chick pea flour
2 tablespoon Oil
1/2 teaspoon Carom seeds (ajwain)
1/2 teaspoon Red chilly powder
1/2 teaspoon Coriander powder
pinch of Turmeric powder
salt to taste
water as required
2 tablespoon Coriander leaves for garnishing
1) Wash Toor dal well. Add 1 cup water and toor dal in pressure cooker and pressure cook it on medium flame.let it whistle 5-6 times.
2) Mean while take wheat flour,chick pea folur and all other ingredients for dhokali in one bowl and knead soft dough.
3) Now open the lid of pressure cooker and take out dal in deep vessel. Add 3 cup water and blend it well with the help of hand blender.
4) Add all seasoning, ginger, green chilly and peanuts in dal and bring it to boil over medium flame.
5) Meanwhile, heat 1 tablespoon oil in small pan for tampering.
6)Ones hot add mustard seeds and cumin seeds in that. when it sputter add fenugreek seeds and curry leaves and cook for few seconds.
7) Add tampering in dal and mix well.
8) Now divide dough in to 4 portion then roll each ball in to thin circle about 12 each in diameter with the help of rolling pin.
9) Take one circle and cut it in to diamond shape using knife.
10) Now add 3-4 dhokali into boiling dal at a time and stir it. so it will not stick to each other. Add all the dhokalies and cook it for 10 to 14 minutes.
11) Check one dhokali if it is cooked then switch off the stove. Garnish it with fresh chopped coriander and serve hot.
Tips:
1) Don’t add Dhokali in to dal if dal is not boiling otherwise it will become sticky.
2) Keep stiring dal while adding dhokali.
3) You can add 1 teaspoon ghee in dal dhokali to enhance its test.
