Guvar Dhokali nu Shaak (Cluster Beans with flour dumplings)
Guvar Dhokali nu shaak is very famous traditional Gujarati recipe.It’s very easy and quick recipe.It is very delicious and fulfilling dish. Cluster bean or Guvar in Gujarati is a rich source of protiens and fibers. Guvar has also been shown to be useful in weight loss and diabetes treatments. It’s very healthy and yet tastes very good.
This vegetable is cooked in two different ways but with flour dumplings is my favorite. so let’s start with step by step recipe.
Guvar Dhokali nu shaak (step by step with photos)

Serves: 3 servings
Ingrediants:
200 gram Guvar (Cluster Beans)
4 Tablespoon Oil
6 to 7 Garlic
1 Teaspoon Ajwain (carom seeds)
1 Tablespoon Turmeric Powder
1 Tablespoon Coriander powder
1 Tablespoon Red chilly powder
salt to taste
Water as required
For Dhokali
50 gram Whole wheat flour
50 gram Gram flour
1/2 Teaspoon Turmeric Powder
1/2 Teaspoon Coriander powder
1/2 Teaspoon Red chilly powder
1/2 Teaspoon Ajawain (carom seeds)
1 Tablespoon Oil
salt to taste
Water as required
1) Wash guvar and cut the ends of beans , cut them in 1 inch size.
2) For dhokali dough take whole wheat flour and gram flour in one bowl. Now add all the other ingrediants in that and khead a fine dough.
3) Now make small balls from dough and then press them with your thumb and make Dhokali.
4) When everything is ready Heat a Cooker and take 4 tablespoon oil in that.
5) Then add ajwain (carom seeds) in it and saute for few seconds.
6) now add chopped garlic in that and cook it for few seconds.
7) Add Guvar and seasoning in it and mix well.
8) Then add Dhokali in that and mix well.
9) Now add some water in it and pressure cook it for 4 to 5 whistle.
10) Guvar dhokali nu Shaak is ready. Serve hot with roti or paratha.
Tips:
1) You can use Dhokali to make Dal Dhokali, valor Dhokali, Dhokali nu shaak.
2) Don’t use so much water in this recipe otherwise it becomes sticky.
